Lazy Rosy Rhubarb

I remember going to Grandma's farm house when I was little and helping in the garden. Grandma liked to keep us kids busy. We would shell the pea's and pull carrots for what felt like hours! (I am sure though it was probably closer to half an hour) The days were hot at the farm, and we would have to be sprayed from head to toe with mosquito repellent but we loved our time there. There was a lot of land and a lot of house for us to run around in. In the evenings we would all gather as a family in the dinning room and eat. My favorite dessert that grandma would make always had rhubarb. Now my kids are helping Grandy in the garden and still my favorite summer dessert is Lazy Rosy Rhubarb.





Lazy Rosy Rhubarb
Melt 1/2 cup butter in casserole dish.

Combine: 1 cup flour
1 cup sugar
1 Tbsp baking powder
2/3 cup milk
Pour evenly over melted butter. DO NOT STIR. Add 2 1/2cups of rhubarb sauce. Pour evenly over batter but do not stir. Bake at 350 F for 1 hour or until nicely browned. Serve with ice cream.

Rhubarb Sauce
3 cups diced rhubarb
1/4 cup water

Bring to a boil. Reduce heat and simmer until tender - about 10 minutes. Stir in 1/2 cup sugar. Cook for 1-2 minutes longer
(so good and SO easy! trust me.)

I love rhubarb anything! my grandma makes strawberry rhubarb pie that I'm crazy about! fun that you guys get to continue the tradition!

Ooh that sounds good, I need to go to the farmers market and get my hands on some rhubarb to make that.
And as always that Aubrey melts my heart. She sat on my lap in primary and it made my day!

One of the biggest advantages of living in a place where the summers are short is that instead of rhubarb being a spring treat, we get it all summer long!!! I LOVE rhubarb. And Aubrie with those massive rhubarb stalks.......mmmmmmmm! Yummy!! I am so lucky to have my littles come play in the garden with me and eat rhubarb dessert.

p.s. I like to add a healthy teaspoon of good quality vanilla to the rhubarb sauce. Makes this recipe even a tiny bit better.
